Omelets - flat of fluffy?

Alright, maybe I can start a little controversy on a Monday afternoon. My sister and I debate every now then whether omelets should be flat (diner-griddle variety) or fluffy (from a proper omelet pan - clearly my favorite). I am interested in people's opinions as to where I could best get my three-egg cholesterol fix on Sunday mornings.

I don't need fancy sun-dried tomoto, avocado, or shrimp as one establishment tried to push on me Saturday, but just a classic, well-prepared omelet with really good eggs, cheese - and maybe one other assorted compliment and probably made with lots of butter.

Any recommendations?
