A couple of friends and I are planning to have dinner at Oliveto on Thursday night, and we are planning to go all out. This is the first time I will be going to Oliveto. This is also probably the last no-holds-barred dinner I will have for some time to come. What are the strengths of the restaurant? I'm assuming they have some dishes that remain consistently delicious from day to day (e.g., don't they cure their meats in-house?).
That is to say: if you could design your IDEAL meal at Oliveto, what would you order, from the appetizers down to the desserts? If you feel there's a general category of dishes they do really well (like a certain type of meat), please feel free to mention it.
Also, I'm curious to hear any comments about the new chef.
