NYC hounds going to Hilton Head for Labor Day weekend

Hounds, this will be our third trip to HH, we are staying at Sea Pines for a weekend of golf and more golf. Have read all the recent threads, have a few questions. Basically, we are happiest just eating simply cooked, clean food --- some killer oysters, grilled fish (hopefully fresh off the boat that day), a good salad, a fairly priced wine list. We've found Redifsh to be excellent in the past and thought we'd try that again, what do you think? I don't remember every place we didn't like except for CQ's and The Studio, both a little too precious for us. Was looking at the following: Black Marlin, Skull Creek Boathouse , Hudson's on the Docks, and maybe Roastfish and Cornbread? Do any of them take reservations? Any advice would be appreciated!!! Also, my brain is flashing on a place that was off the beaten track, upstairs from a trailer park or RV place? Is that still around and is it any good?
