Nose to tail eating?

The husband and I are coming up to visit for a couple days, and I want to check out the restaurants, as one does.

So, where should I go to eat the nasty bits? I see a lot of menus with sweetbreads and foie, but that seems to be about it. One of the Korean places had spleen, but are there any non-Asian restaurants serving organ meats?
