NOLA Itinerary - Comments and Suggestions Please!

I am going with a friend to New Orleans May 25 (arriving 10:00 am) – May 30 (leaving 4:00 pm) and could really use some insider advice/guidance on my food itinerary. My friend will be attending a conference so for some lunches and breakfasts I will be alone. We really want to pack as much as we can into our short time in the city. Ideally, I would like to do three meals a day so that we can try as many restaurants as possible, and I love to walk. So, hopefully, we will work up an appetite. Our hotel is on Canal and Magazine. The following is the itinerary that I have so far:

Breakfast/Lunch – Don’t know yet
Dinner – Brigsten’s (thought this would be a good NO intro)
Activities – French Quarter and Lafayette Park Concert Series (afternoon/early evening),
Preservation Hall and Carousel Bar (night)

Thurs –
Breakfast – Stanley’s
Lunch - August (followed the reviews saying lunch is a great value and experience)
Dinner - Emeril’s (my friend really wants to try this place)
Activities – Lafayette Cemetery and Garden District (morning)
City Park/Bayou/Esplanade (afternoon)
Vaughan’s (night)

Fri –
Breakfast - Café du Monde or some other quick bite
Lunch – Galatoire’s (downstairs – I really want to experience this, if we get there by 11:15 should we be able to get seated?)
Dinner – Can’t decide
Activities – St. Louis Cemetery (morning), French Quarter (afternoon), Snug Harbor and Frenchman Street (night)

Breakfast – Elizabeth’s
Lunch – Casamento’s or a po-boy somewhere
Dinner – Again, can’t decide
Activities – Whatever we feel like (morning and afternoon), Not sure about night (maybe Tipitina’s)

Brunch – Commander’s Palace
Snack - ???
Dinner – A lot is closed, I am trying to decide between Upperline, Stella, Luke, and Dante’s Kitchen
Activities – Magazine Street and Garden District (afternoon), Maple Leaf (night)

Breakfast: Camelia Grill
Lunch: Mr. B’s

For Saturday and Sunday, I’m thinking about these restaurants (they all sound so good I can’t decide), but I would welcome any other suggestions:

La Petite Grocery
Jacque Imo’s

I'm a little worried that we have focused on too many big name places and are losing out on some of the hidden gems/local favorites. Any thoughts???
