People are always asking about where to find various cured meats, so when I saw an impressive (to me) selection of Niman cured meats I wrote them down:
Applewood smoked ham (steaks, "petit" and larger)
European-style dry-cured "Jamon Royal"
and of course, bacon
I also tried one of their "Smart Chicken" breasts, which was excellent, especially the texture.
