I am interested in taking cooking classes re Moroccan or Middle Eastern cooking techniques. Can anyone suggest any schools or individuals who offers such in Manhattan, Brooklyn or Queens? I'm a pretty experienced cook so I am looking for a place that would offer a serious experience - not just looking to spend an afternoon learning to make cous-cous. Ideally, the class would extend over more than one session and would focus more on techniques than recipes. Any suggestions would be appreciated.
