Merguez

Yesterday evening I was wandering around Park Slope
looking for somewhere to eat; I eventually found Fava
Mediterranean Grill, a Middle Eastern (-style)
restaurant with reasonably good Hummos and rice
(unfortunately the rice was pretty cold) and ful.
Hitting all the trends they also had brick oven pizza,
which I did not try.

One unexpected thing was a sausage I have never seen
before called Merguez, which is minced lamb with
slivered almonds -- it is very tasty! Does anyone know
the genesis of this sausage, and why it is not a
standard offering at Middle Eastern restaurants around
town?
