The Litchfield County Farm Bureau will be screening the film AMERICAN MEAT tomorrow evening, Wednesday, June 19th, 2013, at the auditorium at the University of CT campus in Torrington. The doors open at 6:30pm and the film starts at 7pm.
The film shows how some long-time family beef, hog and poultry farms have modified their production methods to be more environmentally sustainable and humane, and in the process, wind up with a product that is healthier and more flavorful for the consumer.
Following the film, an open discussion will be held with the following on the panel:
Christopher Prosperi- Chef/Owner of Metro Bis restaurant in Simsbury, CT, a Hartford Courant recipe columnist, an international cooking teacher from Mexico to Italy, a weekly chef on NBC 30, and weekly co-host on "The Faith Middleton Show: The Food Schmooze" on WNPR. The New York Times declares "...Prosperi is a technical master, an original American chef whose restaurant is worth traveling for" and the Zagat Survey has ranked Metro Bis in the top five in the state for American food!
Michael Keilty- works with the SARE (sustainable agriculture research and education) state coordinators in CT, MA and RI to coordinate a tri-state SARE program dealing with local meat production, processing and marketing in Southern New England. Since 1974, Michael has owned Maple Spring Farms, a diversified farm in Morris, CT raising livestock, produce and herbs for culinary and medicinal uses.
He has also spent many years working as a research assistant and agricultural educator with the Department of Plant Science at the University of Connecticut, coordinating a wide variety of sustainable agriculture programs. He is also a member of the CT Food Policy Council, author of Alternative Health Practices for Livestock, and the founding chair of the Connecticut Community Gardening Association.
