I've been getting a late start on holidays this year. I work in a bakery and am going back to school for web development, so I mostly daydream about what I would like to make for Christmas.
I'm probably going to make some gluten free gingerbread quick bread for Christmas day. That and a tofu breakfast casserole. I think I am going to make this one with some added cheese sauce (nooch) to take it up a notch: http://www.justmommies.com/forums/f15...
Christmas day itself is going to be interesting. We are all going to my grandmothers where a ham is going to be the centerpiece and then everyone is bringing "salads." I'm from the Adirondack mountains in NYS and that is another post in itself. I've already accepted the fact no one in my family will probably eat what I bring, except maybe my sisters and my mother. So, moving on:
I'm thinking a roasted sweet potato salad with black beans, sunflower seeds, cranberries and an orange juice dressing would be very good. Maybe I will toss it with some spinach greens.
I also think I am going to do a version of the "corn pudding" with a bob's redmill GF cornbread mix. (I'm gluten free too)
Not sure what I am going to do for a center yet. We'll see.
