This topic may get bumped, but here goes.
So I FINALLY got to roast a Maine-ly Poultry chicken last night and it was really fantastic. They are available at Rosemont market and Whole Grocer.
The appearance of the chicken seemed a little different than the usual chickens, the skin thicker and a smaller breast. I did brine it (as a matter of habit, I didn't even think about it), but roasted it very simply -- salted, dry at 450 degrees.
The chicken had such a full flavor, very "chickeny" and moist. Really excellent. This is my choice for a roasting chicken from here on out as it is so much better than the others.
Are there other local, free-range high quality producers you would recommend?
I think this chicken would also be excellent butterflied and grilled -- I can't wait.
