Note: this was edited to include a key ingredient I'd forgotten!!
The laziest and most shamelessly Trader Joe's obsessed recipe ever is also one of the most quick, satisfying and nutritionally-balanced, and nutritious recipes ever (well, ok...not "ever"!).
Round up the following from TJ's (all of which should be on hand anyway!):
"Simply" turkey, roasted and sliced (surprisingly good and non-coldcut-ish...not dry, either....find it refrigerated near the meats and sausages)
Hummus guacamole (garlicky, found in the fridge section near the lousy regular hummus)
Whole wheat english muffins (sensational, and sensationally nutritious)
Pre-washed baby spinach.
Put a bit of water and a bit of EVOO in a non-stick skillet, heat to medium, throw in some turkey slices and a couple handfuls of baby spinach leaves and cover.
Split and toast a whole wheat english muffin.
Generously drizzle each half of the toasted muffin with your best EVOO and slather with the hummus guacamole, and stack alternating layers of turkey and spinach.
The result is awesomely satisfying, and near-perfectly balanced. Serve to someone and dare them to guess your prep time!
