Latkes and Goose Fat

I recently heard that latke's were originally cooked in goose fat and served with the beetroot horseradish. I've never had latke's as apart of a meat meal (though I know that sometimes happens), but I've never heard of them cooked in goose fat. Am I missing out on something or is this not really done by anyone?
