I was watching an episode of Feasting on Asphalt wherein Alton goes to a fantastic soul food place in, I think, South Carolina. It used to be a laundromat, if memory serves. At any rate, it got me to thinking about soul food. Oh... soul fool. We got a late start last night, so Front Porch was out of the question. I think I woke Rob this morning with a *tap tap tap* "So..... what time do you figure Popeye's opens?"
Instead, got dropped off at Whole Foods and cooked myself the following feast... it is now 6:07 PM and I was dropped at Whole Foods at about 10AM. What? The Chicken had to soak!
Southern Fried Chicken with Rainbow Chard and Black Eyed Peas with a touch of Almond Coleslaw (made by Whole Foods) and a side of Macaroni and Cheese (again, Whole Foods.) Drizzled with my homemade Jalapeño Apricot Jam and a side of Jalapeño Cheddar biscuit. I has the Jam left over from the Holidays--- my "double batch" made nearly four times the space of the jars. It is great with this extra spicy (Dave's Insnity Sauce soak-spicy!) chicken.
Ps. I really really really wish the Food Netowrk would stop playing the M&M's ad with my favorite The The song in it.
Pss. "Dinner Impossible" is my new favorite show!
