So, all of a sudden at Loblaws, there is a selection of "the other red meats" - bison, ostrich, boar and kangaroo. Since I've had bison and boar and the butcher said don't waste your money on the ostrich - it ain't that spectacular (for the price), I went for the kangaroo. I was convinced it would be very tough and gamey. Well, color me shocked when, after searing it on both sides in a cast iron frying pan, and then finishing it in the oven at 425 for 10 mins - it was ridiculously tender. It had great subtleties in the falvour also, gamey but delicate too . One caveat though - the one they sell (frozen) at Loblaws comes layered with a "duxelles" of mushrooms. I scraped them out - as they were, well, blechhhhhh. But I do highly recommend the meat.
