Jean Georges two-course lunch--recommended dishes?

I've read reams of reviews in preparation for a lunch this week. And I had planned to order the skate with Chateau Chalon sauce, only to find that the skate on the current menu is now "steamed, with roasted pumpkin seeds, spaghetti squash and soy-yuzu broth," which sounds far less appealing to me. It also appears to be listed with the appetizers on their website.

On the two -course prix fixe, can one order ANY two dishes on the menu? For example, salmon and sweetbreads, both in the main course section?

Most important, I am looking for clues on which dishes are best on the current menu. I will probably skip the sushi/crudo fish appetizers. I've had the foie brulee and loved it, but would like to try something new this time...

Please feel free to offer any and all opinions on the current lunch menu..
