Not sure if this should be posted in "recipes" since I want the advice of locals who have eaten and cooked the dish...
I found the recipe online and, for those of you who have eaten the dish at Jar, I need your advice.
The recipe calls for "3 - 5 lbs of denuded boneless short rib" No problem. Found it at Costco (and Whole Foods). Here's my question - the short ribs at Costco come in approx. 1 1/2" width slices. I can get bigger "chunks" at Whole Foods by special order.
Does it make a difference? Will the thinner Costco chunks work well? Is this what was intended?
