I went to Jake's this week for the first time in a few years because I read a little report in the Houston Press about it last week. The sandwich hasn't changed much from what I remember, and that's a good thing. I can't recall why I stoped going here for my weekly CS fix. This sandwich as as good as I remember at Pat's in Philly when I was 17 years old visiting a buddy of mine from a nearby New Jersey suburb. One of the most important aspects of a CS is the bread and the one at Jake's is chewy and slightly crunchy at the same time. Then they throw on a good amount of sliced rib eye some cheese and for .50 you have to add cheez whiz. While taking your first bite, watchout, because a good amount of fat will ooze out the bottom. For some reason the cheez whiz mixes perfectly with this sandwich. I can't say that I have ever had cheez whiz and when asked in Philly if I wanted it on my sandwich I almost balked until my buddy stepped in to correct my. I am so glad he clued me in on this cheesey delicacy for this sandwich. I have one minor complaint with this sandwich though and it is the onions. The way I personally like it is with diced well cooked unions instead of the rings of carmelized onions. It's only a minor complaint but the diced onions can better meld into the meat and become a part of the sandwich rather than a topping. All in al I would rank this just ahead of a deleware sub cheese steak as far as the ones I have had in Texas.
