Strolled by Ichimura and decided to see if they had room. Of course if you call they are booked for 3 months. The reality is, they get cancellations often, and it is always worth a shot to pop in. I've done this more than 20 times and at least half the time I get seats at the sushi bar.
The sushi/sashimi was fantastic as usual. What is very interesting is that
Ichimura-san takes great care in how long he ages his fish. He gave me
tastes of the same fish aged, 2, 3, 5 days and the subtle differences in taste and consistency is something to marvel at. I have not had that experience elsewhere. I have had fish aged and have asked how long, but not had the experience of comparison. Definitely a great sushi experience
