My lab (we study flies at Caltech) is having another food-themed party -- last time it was Mangoes, this time it is "fungus & chocolate". As you might imagine, all things must be cooked using at least one of the theme ingredients, just like Iron Chef - but not at all competitive (not yet anyway).
So I have about 5 days to find interesting edible fungi. I would be happiest if anyone could help me track down the elusive huitlacoche -- is it seasonal? can I find it fresh? if not, has anyone had success with the canned product, and where can I find it?
Other interesting fungi recommendations would also be appreciated. I know that truffles are out there (especially at Nicole's in South Pas), but I'm on a student budget and I think they are totally overrated.
