Ok I confess it was a Gourmet article about dried ingredients in Chinese cooking, but the picture of the warm, brown soup stock with black fungus and golden needles really gave me a craving for a classsic, rich, smoky white-pepper spicy H&S soup, preferably on the Westside, near where I live. I trotted off to Chyn King on 3rd, but it wasn't smoky and rich enough. The vinegar predominated. Any suggestions?
