Hors d'oeuvre

I am a Caterer and was asked about an hors d'oeuvre that consisted of pasta twirled on a fork and passed.

It sounds interesting and fun, but other than reading about Soba Noodles and chives on a fork I can find nothing more out.

I would love to try this - any suggestions would be really appreciated.
