Hans, the sterling waiter of Bibou and his charming wife Samira with chef Ross and most of the waitstaff of Bibou has opened a popup, monthly in the Farmacy RX space at 45th and Spruce.
Tonight, the 13th was the second of these dinners for guests that were invited just by asking him at Bibou.
While l will get to the food in a moment, the thrill of this place was many of us knew each other from varied food experiences, the place was packed with happy people. Wine was going from table to table and the party atmosphere was infectious.
Egg salad with truffle that was a fab egg salad
Pate on toast that was very well done
Schmaltz of pork on toast, really unusual and good
Split pea soup with toast, hot dogs, and frozen peas, this was much better than it sounds and did not see a plate return but scraped clean
Tripe and beef, for me total heaven, little spice, little richness, wonderful
Charcroute with ham hock, kraut, mashed potatoes, three sausages
Strange German raw milk that looked like jellyfish
German chocolate cake, what else
Next time at Bibou, ask Hans if you can go, so much fun, $ 30/pp
