Does anyone know where I can get Guinea Fowl around here? I'm not sure if I've ever seen it around. I was going to make Thomas Keller's Guinea Fowl with Confit Byaldi from The French Laundry Cookbook, but that's going to be hard to do without the bird.
Similarly, where can I get Japanese Eggplant for the Confit Byaldi? Chino Farms? Nijiya or Mitsuwa? Is it even in season?
