Great Sandwich Spots in Nova Scotia

I'm looking for suggestions for truly great sandwich places across the province. We live in Yarmouth and frequently travel from one end of the province to another (almost). I don't like fast food, especially when I drive, so I hope to eliminate the crap shoot that is the small town diner or family eatery.

I will say outright that I am a fan of the sandwich. Like pizza, it is ubiquitous in every small town and big city. Like pizza, so few do it well or even adequately. And like pizza, when done right it can be transcendent. I would love to hear about the spots that serve a variety of excellent sandwiches, whether fancy shmancy or hard core "what'll ya have dear" diner. I'm looking for as much as possible to be made in house from scratch. Excellent bread is an absolute must.

I can start things off by saying that in Yarmouth we have an amazing sandwich spot: the Old World Bakery and Deli. Big beautiful sandwich rolls made fresh right there. All meats roasted or smoked in-house. Fresh, real vegetables. And a desire on the part of the owner, Tony, to make sure flavours are balanced and the sandwich works as a meal.
