i made my first zucchini cake tonight and i grated the zucchini with a carrot peeler. it created long ribbons and i went with it... but know i realize the recipe might have called for a cheese grater? is that right?
also, it was in a bundt pan and the crust turned very brown by the time it was finished. is it best to tent the cake with aluminum foil in the future? not sure there will be a future for this pan - my cake totally cracked in half.
