In the Tulsa OK area you can get unpasteurized cheese (I like the white cheddar best) at Swan Brothers Dairy near Claremore. If you are visiting Oklahoma State at Stillwater, a short drive south to the Idle Knot Dairy near Ripley will yield several goat-milk cheeses, including a goat-milk cheddar and some Spanish types. I haven't tasted them all, but I'm trying (they're also at Crescent Market and a few at The Earth in OKC). The last I heard, regulators will not allow him to mix cow & goat milk and that is wildly frustrating since obviously it limits the cheeses he can produce. If you stop by, he'll tell you ALL about it, trust me.
