A Scandinavian butcher I know is going to be in Las Vegas next spring. First time in US. I've been trying to get them to make good sausage of the types below but have never been able to 'describe' well enough what I'm after.
Can anyone suggest a place(s) in LV where I can send him to taste Italian Sausage (NY pepper and onion - street stand-style) and Wisconsin-style Bratwurst - and a taste of good breakfast sausage - Johnsonville type even OK. Usinger types good.
(and sausage WITHOUT all the gristly bits and pieces that too many sausage makers let go thru)
No one knows Italian or Breakfast in Scandinavia - and Bratwurst subject to a bunch of crooked German companies cutting corners and you never know what you get - healthy enough and all that but missing much spice- and texture-wise.
The visit will not accommodate any own cooking so must be available from sausage stand, breakfast place, etc.
