So much beautiful food...so little time.
I haven't turned on my stovetop in weeks except to boil water for pasta. There's too much fresh produce to believe.
From my garden: gorgeous heirloom and other tomatoes, basil, peppers, apples, squash (now gone)
From my Mom's garden: more tomatoes, green peppers, cucumbers, corn, blueberries
From other friends and relatives: peaches, figs
From the farm stand: nectarines, plums, blackberries, raspberries (now gone), watermelon
I've done nothing but eat fresh veggies and fruit as fast as I can. I've lost a couple of pounds, but my stomach hurts off and on. A friend of mine has the same complaint. A quick google tells me that TOO much fiber can actually give you some stomach distress. I've had to cut back a little. (in particular, I think the cukes are killers)
Anyone else find they are eating just a little TOO healthily?
