I needed to make mini cheesecakes for a co-worker's birthday, so I was delighted when I saw Giada making some on Everyday Italian a couple of weeks ago. However, when I looked at the Food Network recipe, several readers complained that it was impossible to get the cheesecakes out in one piece.
Luckily a reader suggested cooling them off as instructed for 30 minutes at room temp, but then placing them in the freezer for 15 minutes. I did this, and the cheesecakes popped out beautifully! I've attached a couple of pics but there are more detailed pics here:
