German -- Rouladen

I have read some of the threads on the German restaurants in Chicago, especially the very good one started by Fast Eddie in June. I have a German brother-in-law coming to Chicago next week from Houston. He wants some good rouladen, red cabbage and liver dumpling soup. Does anyone have an opinion on which of the few remaining German restaurants have the best of these dishes, especially beef rouladen. The restaurants on my list are the usual suspects--Edelweiss, Chicago Brauhaus, Resi's, Laschett's, Mirabell, Bavaria Hof(Schaumburg), and of course Berghoff's. Berghoff's. believe it or not, only serves rouladen on Saturday. I must confess the only German on this list that I've been to is Berghoff's. The German's I used to frequent are all gone(Shulien's, Zum Deutchen Eck, Brown Bear?, Heidelberger Fass, Golden Ox.)
