Lately I've been exploring the fish counter more at 99 Ranch. They usually have about 20-30 different varieties of fish there, most of which I have never even heard of (stuff like Milkfish).
I've bought the Sea Bass to use for cantonese style steamed fish a couple of times and found the quality to be not that great (flesh very mushy and muddy tasting). Over the weekend I bought one of the farmed Snappers (not the big red "true snappers") and it was slightly better.
Does anyone have any recommendations as to which varieties tend to be the freshest and best tasting? I'm looking for something with firm white flesh, preferably without a muddy aftertaste such as with catfish or tilipia.
I would like to try that "true snapper" which is supposed to be wild caught from Mexico, but they are huge and way too much meat for 2 people.
