I'm making a potato dish for roughly 75 people and would like to do mini twice baked potatoes. My vision is Russetts, about the size of medium red potatoes. How to describe? The size of a large baby's fist? Do such things exist? If so, does anyone know where I can find them in SoCal? I've never seen them so I suspect that I'll have to special order them if they are available. Thanks.
