Reading the latest CUESA newsletter I noticed a mention of fava greens availabile this week.
I thouhgt "huh"? Was that a typo or something I never heard of, so I did a search.
Knoll Farms sells them and Rick Knoll of Knoll Farms describes the flavor:
"It has this real buttery, strong, rich, really delicious flavor. "
Someone else said they were like fava-flavored chard.
So my next thought was whether restaurants were serving it. Saw a mention by Robert for a dinner at Olivetto.
It seems like most of the mention of restaurants serving these was around the 2002 time frame. Has anyone seen these on menus recently? Any other farmstands besides Knoll selling them?
I see that at the beginning of the month Cafe Rouge was serving
Spaghettini with Manila clams, green garlic, fava greens and cream
Anyone tried this?
