low fat low fiber diet (longish)

My fiance just got out of the hospital and is on a low fat AND low fiber diet. I already tried control-F "low fat" and got nothing on this board.

Here are some guidelines:

Meat and fish: skinless chicken, other meat trimmed of fat, fish but no shellfish.

Vegetables: limited to peeled potatoes, beets, carrots, asparagus tips, tomato sauce.

Fruits: canned fruit, applesauce, fresh fruit that is cooked and peeled.

Milk: 1% or skim, some low-fat yogurt and cheese.

Beverages and juices: coffee, tea, fruit juices such as apple, grape and cranberry.

Pasta and some refined cereal is also allowed.

So far, I've roasted beets, grilled fish with the George Foreman grille, and poached various meat and poulty in chicken broth with potatoes and carrots.
