Ethnic eating lover needs Bay Area recs - just moved from NYC

Hello all -

I've just moved to the Bay Area (Palo Alto) from NYC, where I spent ample time exploring ethnic neighborhoods and eateries. I was a big Chowhound and Robert Sietsema (Village Voice food columnist) fan, and want/need to continue my ethnic eating pursuits in my new digs.

I would greatly appreciate recommendations for best ethnic eating places in the Bay Area. I'm talking real-deal, hole-in-the-wall, authentic-as-can-be spots. Waitstaff from country of origin a must. All over the Bay Area is cool - I'm willing to drive as far as necessary, as long as the place is legit.

I'm interested in all cuisines, but to spur imagination, here are some that I particularly like. (Realizing this is a broad post, please limit to absolute faves).

--Chinese (SICHUAN, Cantonese, Shanghai soup dumplings, Beijing-style dumplings and snacks, Uighar)
--Vietnamese
--Malaysian
--Thai (Southern, Isaan)
--South Asian (Northern India, Southern India, chaat and snacks, Pakistani)
--Brazilian
--Latin American (Ecuadorian/Peruvian)
--Ethiopian/East Afican
--Central Asian (Uzbek, Georgian, etc)
--Afghan/Persian

Recs from any cuisine would be welcome. And I'd be very willing to reciprocate with recs for all 5 NYC boroughs for those that want them.
