If there were no truth to the health risks associated with eating Escolar this would be a non issue. The fact is that certain people are pre disposed to ill affects brought on by consuming it. Since it is not a target species of commercial fishing fleets and rather a by-catch it is seldom found on the market. In New Zealand and Austrailia it has been sold under the name Rudderfish a harmless fish whose name has been sullied by unscrupulous people who mis-represent Escolar under the name.
The wax found in the flesh of the fish has similar affects on the body as does Castor oil. Since there is no way for the consumer to know if he or she will be made ill by eating the fish I theink all of the hoopla is warrented.
Unlike Fugu, anyone can handle Escolar, and there is no safe way to prepare it to protect those who would be made ill by it so why bother. Let the Escolar be and eat more Wild Salmon.
