I know, I know...you've all been dying to hear about this (heh heh!)...but, you know, so many times people ask for advice or input on the board and then we never hear about how it ended up, whether they used anyone's advice or recipe or not. Just me and my curiosity, I guess, but I made a Chipotle Chicken Stew from Cooking Light that was very good. I poached the bone-in chicken breasts to make the broth rather than use canned and I used frozen corn instead of carrots but it was healthy and tasted great with extra cilantro and crushed up Tostito-style chips as garnishes.
