I can write an ode to Echire. I love the smooth, sublte, silky flavor. Sometimes I bring it with me to breakfast, and slop it on some waffles. Jin at Le Sanctuaire in Santa Monica butters his bread with it.
From what I understand, only the most discriminating French chefs and fine gourmet stores can access Echire unsalted.
Unfortunately, I'm at a loss as to where to find it. Le Sanctuaire doesn't stock it consistently, and has not carried it in a long while; their reason being the unsalted variety goes bad after only a few days.
Surfas no longer carries it.
Market Gourmet has only the salted.
And, get this. The Cheese Store in Beverly Hills tried selling me unsalted Echire that has expired December 2004.
My last resort is online, where I'll pay something like $25 a stick with over-night shipping.
If you have any leads on where I can hunt this rare stuff down, please let me know.
