What to eat in Bakersfield?

Making a trip there for business and staying a week. I've started reading up on Basque cuisine and the restaurants in town and I'm already thinking of hitting both Wool Grower's and Noriega Hotel. From a few searches it looks like Bakersfield has plenty of good locally owned eateries, and I will be visiting LA and SF after this trip, so I'm looking for places that are a good representation of the area. What else besides Basque? I'd prefer casual/hole in the wall over high-end/white tablecloth type dining, for both lunch and dinner. Read some great info so far, looking forward to some more ideas!
