Hello Seattle Chowhounders,
I will be visiting for a week in September, staying at Inn at the Market.
I love salmon and salmon skin, the "bacon of the sea". My favorite sushi chef here in Austin, Texas will make me a "salmon skin salad" that I completely enjoy.
I've read the posts here re: best salmon in Seattle, but have not seen many references to salmon skin.
Can you recall having any delicious dishes that feature salmon skin?
