I just thought I'd get this out in the open before it becomes an issue. Forgive me if the following makes it appear that I'm taking myself and this site too seriously, but I know how people can get about these things and I don't want to ruffle any feathers. After a hiatus of several years, I'm on the verge of becoming one of "them" again. Over the course of the late spring and early summer, I will be part of a team that is opening some restaurants in the Chapel Hill and Durham area. It won't be a chain or anything. Two will be similar but of different scale, and the other will be entirely different.
Understand that it is my love of food that drives me in this profession and that I'll always consider myself a diner first. Thus, please assume my comments are written from that perspective. It's a thin line distinguishing "competition" from "collegues", so understand that I only give less than flattering comments where I feel they are deserved. The last thing I would ever do is pan an undeserving restaurant just to get a leg up. Difficult as it may be, I will resist suggesting my own places when someone is looking for something that I feel we well. Hopefully, they'll be good enough so that others will be inclined to do so instead.
Just as I encourage other chefs I know to hit this site to see what people are saying about them, I certainly intend to do the same. In the spirit of not hyping or promoting (as per site rules), I don't intend to say what places are mine unless you all really want to know. In any event, should anyone figure it out, please don't pull any punches. I really hope to create some great places to eat and always want to know where I may be missing the mark.
