Mention New Orleans, and three C's often come to mind: Cajun, Creole, and Commander's Palace. And it is these three C's that helped shape the life of our speaker, Dickie Brennan. Dickie is part of the famed Brennan family, who helped build New Orleans' reputation as a dining mecca. Dickie grew up in the kitchen of his family's acclaimed eatery, Commander's Palace, studied under Paul Prudhomme, and became the only Brennan to hold the Executive Chef title. He also found time to earn a degree in finance. Later, he traveled to New York to apprentice with Chef Larry Forgione. Soon after he headed to France to cook in some of the world's most famous restaurants, including La Tour d'Argent and Taillevent. Today, he is the managing partner in another New Orleans family operation, the Palace Cafe, which opened in 1991.

Dickie also is an unofficial ambassador of New Orleans and talks nationally on the cultural and culinary history of his beloved hometown, a history of which he and his family have been such an important part. Dickie also will be signing copies of his book, "Palace Cafe: The Flavor of New Orleans." (All profits from the book sales will help fund the Culinary Historians of Chicago.)
