Was wondering if anyone has a good yellow cake recipe for cupcakes? I prefer them dense rather than fluffy. I bought and made the Sprinkles Vanilla cupcake mix that I purchased from Williams Sonoma. I wasn't knocked out by the flavor but I found the texture to be great, nice and moist and dense. At $14 for a mix that makes only 12 cupcakes I was hoping to be blown away, but no dice. Also, are there any tricks for doctoring a Betty Crocker or Pillsbury mix to make the cake firmer and less airy? Any thoughts would be helpful.
