Help me decide between: Blue Hill, Veritas, Aquavit, Hearth, Bouley

Here's a more specific version of a previous request:

I'm looking to pick a nice place to go with my girlfriend. So far, I'm thinking Blue Hill, Veritas, Aquavit, Hearth, or Bouley, but am open to any and all other suggestions. Here's the criteria:

1) A total of $200-250. I figure this can be $70 or so for a tasting menu or pre-fixe, plus $50 or so for wine (wine isn't the most important aspect of the meal, so as long as there are at least a few pretty good choices in the 50-60 range, that's cool).

2) Food should be creative and well-executed, either something new and different or more traditional but not stale (concept-wise, obviously, no stale food either, but I'm not too worried about that).

3) Restaurant should be on Open Table (I'm using an Open Table gift certificate).

4) Pluses include good seafood dishes, although I'm more interested in a place that will leave me saying "wow" than one that I go to just because it has seafood options.
