I only know David through past experiences - all positive - at Toronto's Patriot, Accolade and the Drake. Chef Christian is now running the Centre for Wine and Food Experimentaion out of Grimsby where he matches his food with the wines from Niagara wineries.
Yesterday I went to Stratus Winery (opened in June and impressive) for their Festive Lunch - 3 courses with 3 wines for $50 - a bargain.
The appetizer was choice of "clam chowder" with black truffles and crème fraiche or panko crusted organic turkey breast with smoked ham, vegetable hash, sage and dries lemon jus.
The main was choice of roasted beef striploin with blue cheese and miso gratinee, creamed spinach, garbanzo fritter and roasted garlic jus or black trumpet and rosemary crusted albacore tuna loin and squash and lentils, mushroom broth
Dessert: spiced pumpkin cheesecake with Ontario peanut praline.
We were there for an early lunch and decided to each order a different appy and main and split them. As there was nobody else there at that time (it did fill up)Chef Christian offered to make a mini-tasting menu for us so we each were served generous portions of each of the 4 dishes. I am a fan of David's cooking and there were no disappointments yesterday - it was superb.
I highly recommend you keep your eye open for any further offerings from the David Chrystian (Web site below)- it's worth a trip to Niagara.
