Dacquoise is a dessert cake made with layers of almond and hazelnut meringue and whipped cream or buttercream.

Many years ago, in another part of the country, my wedding cake consisted of hazelnut dacquoise, sandwiched in between layers of sponge cake. It was utterly delicious...not just a cake to look at, the taste was unbelievable.

I find myself wanting to find a baker in LA who can recreate a smaller version of this cake for other occasions (birthdays come to mind), and I have no idea in LA if there might be a bakery that would know how to do this? The technique is a French one, so maybe a French bakery?

I saw Bottega Louie in DTLA had a dacquoise in their dessert case, but have yet to try it, and when I asked, they didn't seem able to customize it.

I live in West LA, but since capable bakers of dacquoise may be a hard thing to find, I would be willing to travel to other parts of LA to get one.
