Visiting St Pete from midwest for wedding, made unexpected find: jerk pork cuban sandwich at Caribbean Cafe, 4801 Central Avenue in St Pete.
Thinly sliced meat on lightly-grilled crusty bread with a little mayonaise. (These seem to be salient features of so-called cuban sandwich -- yes?) Roast pork itself not heavily seasoned but, oh, was the jerk sauce fantastic.
Owner claims old woman who used to live nearby still makes jerk sauce for them. Sauce very smooth. Not a sweet sauce. Rich, medium spicy, pleasantly tangy. Sauce achieves quite possibly perfect balance of flavors. Wish I could go back to research this question further.
