Cuban, Greek & What Else?

So I'm going back to Tampa for another annual visit, and am trying to line up various meals. I'll be in Temple Terrace and Carrollwood [I know they're not contiguous]. Here's what I have so far:

Cuban Food: Pipo's Jr. in Carrollwood. Where else should I look for meals & sandwiches? Is there a place near Temple Terrace? The last couple times I went to La Teresita it was pretty notably bland. There was a recommendation for sandwiches at the West Tampa Sandwich shop on Armenia. How does this compare to Pipo's?

Grouper Sandwiches: I went to Frenchy's last time. Not so possible this time. Any recommendations inside Tampa / Temple Terrace. I saw some recommendations for the Green Iguana in Ybor. Other places to consider?

There's going to be a roadtrip to Tarpon Springs for Greek Food. Planning on going to Santorini's -- the first place on the right when you approach the pier. Should I change this?

We were going to get a meal at TC Choy's [yes, I know Chinese food is not Tampa's strength - unavoidable]. Should we be looking at a different restaurant, i.e. China Yuan? I had dim sum at Ho Ho Choy's in Mission Bell a year or two ago, which was best described as "nightmarish."

Any other suggestions for local, good food? Seafood?
