A couple more classic Mexican dishes in big "D"?

I'm doing great w/ chile rellenos, thanks hounds. Nuevo Leon is the present leader in the clubhouse. Next in my quest: 1) the best authentic chicken mole (not jarred, not ladled over boneless skinless chicken breasts, the real from scratch, all day, whole chicken deal), and 2) authentic huachinango Veracruzano - red snapper with Veracruz sauce with capers, green olives, and maybe golden raisins? La Calle Doce's version, although good, was not the authentic savory Veracruz sauce I crave.
Side bars: Agave Azul does a tasty open faced poblano with seasoned pork and a sauce, but I wouldn't call it a relleno. The corn tortillas at Cuquitas are dreamy good. The tortilla soup at Blue Goose Cantina is excellent, a whole meal in itself. By now I have trained the whole bar staff there how to make a proper chilada with real lime juice and no mix.
A good first month - I'm rolling with your help!
